Hit Escape while flying, select Start Recording, give the track you're about to record a name, click Save, then click Fly to return to mission. Your track is now being recorded. To stop the recording either exit the mission altogether, or just hit Escape again and select Stop Recording.

To play the track you've just recorded, go to the main menu and select Extras/Tracks/Select, choose the track you want to play, click Open, then Play...
