Earlier versions of the He 111, the Ju 88 fitting for the BoB version of the Channel map, aswell as Do 17 and Ju 87 B-1 or B-2.
109E-3 isnt too important I think. Not so different than E-4, with very similar performance.
As for bombers, He-111H-2 is perfect for BoB. Even H-6 can be used to simulate H4. We have fitting Ju-88 variants too. A-1 and A-5 early are again perfect. They are not flyable, but the later A-5 was also used in BoB, which you can fly. Ju-87B-2 is flyable since ages. Maybe a Ju-87R-2 would be useful later, which is almost the same as the B-2.
The Do-17, I can agree. I forgot about this, it is direly missing from the game.
As for seaplanes, I wouldnt mind, especially the Ar-196. But I dont think there would be any use for them, because you cant damage ship components, like AA guns.
EDIT: I think there is one more plane that would be fun to fly, and would have uses: FW-200
