Nice picture, if a bit dark. IIRC, the Ju-52 was one of the aircraft that the Nazis trusted the French to build "under license" in Occupied France. IIRC, the immediate post-war French Amiot AAC.1 "Toucan" version of the Ju-52 was likely a perfect copy of the Junkers version, possibly with French language instruments and placards. In any case, the instrument panel was probably compatible with Junkers built Ju-52, and there's no reason why any other functional part of the cockpit should be different.

Sita, unless you see any obvious differences in the layout of the AAC.1 and the Ju-52 instrument panel, treat them as the same plane.

54 Abstimmungs Hebel für die Drehzahl (gross-klein-Sturzflug)

shift lever fire-extinguisher (left and right) on - off

54 Abstimmungs Hebel für die Drehzahl (gross-klein-Sturzflug):
control lever R.p.m. coordination (high - low - dive)

55 Tankschalthebel (Brandhan) (auf -zu):
engine fuel shut off valve (open - close)

hope these are the correct terms

More simply:

53 Fire Extinguisher (left / right engine): on - off
54 RPM Switch: high - low - dive
55 Fuel Switch (in case of fire): open - closed

edit: 53 and 55 are mostly used together in case of engine fire: first you cut off the fuel (55) and wait until the engine stops, then you use 53 to extinguish the engine fire
