After playing this game through nearly four times, the units I have used the most are these:

EARLY GAME

Royal Snakes
Griffins

MID GAME

Orc Shamans
Elven Archers
Hunters
Dryads
Demoness
Lake Fairies
Sprites
Horsemen

LATE GAME

Emerald Green Dragon
Red Dragon
Black Dragon

There are others, but I seem to come back to these over and over again.
