2560 x 1600 Dell 30" OK w/ 2 x ATI HD6970 Xfired
This provides 4 GB of Video RAM, but CLoD never exceeds 3200 MB according to MSI Afterburner monitor. I suspect a single 7970 (3GB) would do very well. Priced at $400US and higher on internet vendors today.
30 inch monitors are pricy, but having used one, I couldn't go back to smaller screens. Shop around...
To really get this to work smoothly with CLoD, I found overclocking necessary on my I7-950 up to 4.2 MHz. This took some serious tweaking, and Hyperthreading must be off to control the temperature with air cooling. Your rig should have no problem.
