Hello Gourmand,
If I guess right you can read french. If so, you are lucky as Herber Leonard did write an excellent book in our language : "Stuka". When I bought it years ago it was already expensive but It worth the price. It the best read on the subject. Most of the answer at your questions shld be in this book and many more. Others can be found browsing the forum. Use according search criteria in the search function. ~S
