I use an I7 and the game uses all 8 threads, but only 4 till I'm looking at the cockpit, and still only about 7%-20% cpu... and thats just because the game isn't very CPU intensive... or just that these intel cpus are super fast, so 20% is a lot... just for a game...

I have an older i7 and was advised to switch off hyper-threading for this sim so I do not know, I will try later tonight and post my results tomorrow.
