As mentioned before there are several things you can do but basically it depends upon the situation. Dog Fighting if you will has so many variables so it's dependant on the situation. There are no WRONG moves either.

In short you have to create Gun Solution Problems for your opponent and it's dependent upon how far away he/she is.

Let’s assume he is in weapons range. You need to not sit there and allow him to pound you. A common tactic is a scissors which is essentially getting him out of phase with you. Quite simple put getting your wings out of alignment and pulling or unloading is the first move if you will. The rest can be up to you. Some planes like the FW have excellent roll and they can use that to their advantage by combining a simple Scissors move to a Rolling Scissors. These are last ditch efforts btw and yes you should be screaming to get help. Also forcing the fight towards friendlies (Drag) is a good idea as well.

Sometimes we are just forced to fight. The idea behind the Scissors is to force some sort of overshoot but there is a cost and that's energy. It may be your plane has better acceleration so again it puts you in the driver’s seat for the fight.

Like someone mentioned. Diving is also another move to better gain separation and put him out of weapons range.

The list goes on and on.
