Try rotating the runway object 180 degrees and place the next waypoint very close to airfield at at least 500m alt. Play with this wp location relative to runway to achieve the result.

Set airfield points (aerodrome points) where you want players to spawn. See stillborn's mission as example. In Game Controls set a key to "Branch" airfield points. More details are in this forums section.

Can not say regarding escort but you can see how the campaign missions are done or copy them. I have seen escort wp in campaign missions. Try playing with speed, timing and relative location of wp of fighters and bombers.

ps. I did not work in original IL-2 FMB and did not read the manual. CloD FMB turned out quite self-explanatory to me except for rotating objects and setting "Branch" key in controls. Requires a lot of trial and error to fine tune any mission though due to available bugs.
