Right now you can hold a key and mouse back and forth to change FOV but that's really unwieldy when using a HOTAS setup. Right now I have it mapped to the brakes since I can't get them setup on the pedals for some reason (probably because the Hurricane doesn't have differential braking - I haven't really looked into it much yet but I digress...).
I think the mini-stick would work great since it snaps back to center which would make it useful for quick zooms without having to let go of the joystick to work the mouse.

Why not head to the CH Hangar forum and ask one of the regulars to knock you up a script to achieve that? I do agree that it would be good to see a FOV axis at some point - but it's do-able in CH software
