This is clearly actually level and the instrument is out

This is due to the way the gyros work. The two main "features" to keep in mind are that:

a) they can become unbalanced from violent maneuvers and require flying level for a few minutes to "straighten out" and

b) if you keep a certain attitude long enough the gyroscopes will default to that state after some time...so for example if you can hold a perfectly steady 30 degree bank for 5 minutes the artificial horizon will indicate level when you are in fact banked.

Long story short, it's realistic and not a bug
