Well your PC is about the same as mine, except for graphics card. I have an i7 930, 6GB ram, Win 7 64 bit. But I have an AMD 6970, and I can dogfight over london with max settings with reasonable fps and without stuttering.

Most reports suggest that video ram is an issue, and the actual GC might have a fair impact too.

So unfortunately I think you only have 3 options:
1) Wait for more patches and see what happens
2) Drop your resolution - I know you think it's awkward, but I think that's the only way at the moment with your GC. How difficult can it be, it's just a few lines in the appropriate config file.
3) Get a new GC.

Given those choices, I'd start with number 2.
