But now there's going to be a lot of things that we'd like to try but the number of slots limits it. Plus, if it makes the games easier, the difficulty needs to scale up (as in number of enemy stacks, AI level and more enemy heroes and more double battles (2 enemies vs 2 of you). Not that there has ever been one of those.

You can never try everything out in this game, that's why it has such a great replay value.

I try to use different units in every walkthrough - my first Legend game I did with all-neutral troops (and Shamans), my second with using only Undead units (and werewolves and sometimes Green Dragons). I played AP first with a Lizardman army, and now I am aiming for an all-elven army.

Yes but that takes a lot of time and not everyone has it. Playing again just to try some new combinations will still limit them (maybe a mod where we can put any item in any slot?)
Plus I still think it could be a very interesting idea 2 vs 2 battles (just like there is Champion of the Arena and Defender of the Crown, there could be an "add-on" in which the central theme was 2 vs 2 fights)

Katauri, give me that as a Christmas present please!

If you want to try out different sets or different units, go into the floating tower in Debir (Orcs on the March). You can purchase units and spells for 0 gold in all levels, to use against the enemy hero on every level. It's a fun "Game" in the game, as the Caretaker puts it. Plus, he says all your dead units will be resurrected in the end. I am only level 2 yet so have not tried (the first enemy is level 7.) Basically, you can try out different unit combinations there.

Looked at it but haven't tried (I also was level 2 XD). It looks like a good idea.

This expansion is turning more as a : Put different ideas and different type of gameplay instead of your more basic and "linear" expanded game with just more things. Which is a great thing!
