Are these multi-turn (10) pots?

Typically USB circuits work better with 20~50k pots, why use 100k - more subject to pick noise?

This depends on the chip, what you are using. And the Joywarrior works best with 100K potis, as it's written in the datasheet of it.
And yes there are multi-turn (10 revs).
