Good spotting. I initially thought it could be a wind direction marker but then the other arrows pointed in another direction, altogether forming a curved path.

Maybe it's a course indicator or even a radar vector indicator. Or maybe it's a training mission and (gasp!) they're trying to teach the rookies how to fly a proper pursuit curve against the bombers

There are some other vids that show these arrows as well.
Although I can't be certain, I always thought they were arrows pointing to other aircraft, much like Janes WW2 Fighters did.

For the movie makers.
At about 2:20 in the first video they were changing the location of the external camera in the shot of the bomber, shifting the camer down and to on side.

I could be wrong but I don't think you can do that in IL2.

I would like to add that the modelling of the crew members is really a lot better than I had imagined. He looks quite realistic.

At 1.15 the gunner's point of view seems to lock to a position looking down the gunsight when he gets close to the gun; as if he is looking down the barrel.

It's the first time I've seen this in a flight sim.
