Plain and simple: Either don't pull the stick all the way back or just turn down the sensitivity like I did. I haven't stalled since.

Flying with the Aviator stick is much easier. I don't know if it's because of the longer stick or I just got used to the turn rates but even with sensitivity all the way up it is a much more intuitive way to fly.

It also helps to keep your throttle maxed out on almost any type of turns. That is also much easier with a stick throttle. Probably not great practice for real dog fights but at least it will keep you from stalling out every time.
