Look dude you can be set in your convictions if you want but of all the concrete problems this game has-oh and there are a freakin huge bunch of them-inpt lag isnt one of them.
If it was there would have been an uproar about it.
Now with my hardware (i7@4.5/GTX580/16gigs yadayadayada) theres no lag but the animation is choppy.
Further if I want to change the sensitivity I can, via the sensitivity settings at will.

The people here have demonstrated that they are the most discerning and complaint prone customer base in the gaming world. Something like that would go over like a lead balloon.
The input lag is on all of my three computers that are very different in therms of hardware. I have a Saitek X 52 joystick. No other input lag on my other sims.

Looking at your first video I can understand your frustration.

I did a check with my set-up and I have no delay at all (MSFFB stick). There was a tiny dead zone around the center position, but that was easily removed with the sensitivity controls.

I notice that your video was uploaded in January. Have you actually tested with the latest official up-date?

Do the control surfaces themselves respond with lag or is it just the control column graphic?

I am assuming you tried what was suggested in the comments, turning off anthropomorphic?
And obviously deactivating aero?

If you have done the above then I would do what I call a uniform fix-it.

Uninstall and reinstall all drivers even if they work well. Make sure your windows is up to date. Then disable anthropomorphic and aero and try.
Then set all graphic options to their lowest, disable anything that can be disabled setting wise and see if you still have the problem.

Also post your hardware settings so we can compare apples with apples.
Will say my computer gives me instant feedback to all movements.
Point of interest do you have trackir?
