Got the same Problem here... joystick is a Thrustmaster T.16000M. Fiddling with the rudder sensitvity did nothing for me.

Can you use Thrustmaster's TARGET software to adjust the rudder axis' S-Curve?

Gotta give that TARGET a try if it helps with the controls. Trimming is also a pain in the arse now as a 1mm movement on the trim axis throws the plane out of trim just like that, like the movement was not 1:1 but something else Shall see if can adjust that too.
