Well I have never sat in a Bf109, but I fly small, prop aircraft. The controls will never stay where you left them in flight, the aerodinamical forces will recenter it.

It also took me a while to find proper dampers. I ended up with this company:

They are pricy when you buy a few pieces only, but they seem to offer a wide range of quality dampers.
