Yes, but the difference is that you are physically doing something with paragliding. Adrenalin/cortisol production is part of the "fight or flight" reaction - your body is being subconsciously prepared for extreme physical activity.

What we commonly call "stress" is associated with being put in a situation which causes the body to get ready for action, but doesn't allow any physical outlet. Sitting in front of the PC and getting wound up by a game fits that description, to my mind.

Also, you have to be wary when talking about "stress" in this context. In physiological terms stress means making the body work harder - exercising, being too hot or cold, high or low air pressure, and so on - not necessarily things which make us anxious, or "stressed".
