Ok first things first...
Have you actually got EVERY plane? if you have you'll have the achievement/trophy saying so. Thats step 1 out of the way
If you have lives set to infinite, then once you destroy your target (crash into it) try to respawn as quick as you can. Might work.
I'll try this myself shortly, as its been a while since i got this one.
