After watching videos of demo gameplay, I couldn't help but notice that the planes looked really jerky. The movements weren't smoothed out. Has anyone had these problems?

Depends on a few things.
In sim mode you will see somwhat jerky flying, because that's exactly what it is. You are fighting prop rotation as well as turbulence. There is also a deadzone issue with flight sticks. Trying to subtly align your sites on an enemy is a little bit jerky because of that. |

I haven't played yet, but I'm assuming the videos I see are gameplay from Xbox 360 controllers.

So nobody's had any problems? I guess when I get the game I can fiddle with the control settings, or get an Ace Edge.

I felt that issue to be honest, it felt like the deadzone was way too big on the 360 troller. I put the sensitivity down to only 3 or 4 bars and a bit more for the elevators and it smoothed it somewhat, but its still there.
