1. You will need the saitek drivers.
2. I'm using the throttle only too, in combo with sidewinder(drivers come with W7 OE) and G940 pedals(with logitech drivers)
3. Your prob is neither related to the saitek drivers or W7, but maybe Teamspeak and/or keyboard/any peripherals you use(best guess).
