I suppose you are talking about rendering of final image. Most renderers use CPU, and not GPU, what makes them slower in rendering simple scenes, but it also allows them to use more complex algorithms, do distributed rendering over the network, and generally get better quality and resolution (especially if you consider how "weak" and featureless are older GPUs). I remember Maya (3D modelling software) having GPU renderer as an option. It allowed to do even real time animation rendering, but its quality and lightning features were far from what software renderer could do.
