You can't build castles, but you will be able capture them and receive tax money from nearby lands. When assaulting a castle, you better come prepared with battering ram, trebuchets and so on. The game is sceduled to be released in English this Autumn.
A Holy land expansion would be interesting for sure, but this depends on the success of the game obviously.
