If you mean when it says press select to continue the mission, it only does that in a few of them, and it only lets you land in two of them.
The only mission where you really get to do anything by continuing is Red Skies of Dover. There you can finish off the rest of the stukas for extra points and then go land. One other Britain mission lets you land also. The rest of the "continue missions" just tell you to leave the engagement area.
The best way to practice landings is in training. There's airfields in the britain maps, and Sicily the Coast, and Stalingrad. The Stalingrad fields are near the city of Gumrak, and near Stalingrad itself, so you can find them on the map. Easiest airfield is Manston in Britain where you could land a 747. Pick a slow or badly armed opponent, like an i-153, or one that won't be able to strafe you on the ground like a me-162. Then you can ignore them for a while and concentrate on the landings and takeoffs. If you train against bombers, they'll drop bombs on you if you land.
