check the encyclopedia, all the moves needed are there located under stunts.
Maybe you also need to do the hide in the clouds thing?

did you do the flat spin correctly? normally the game tells you to steer along with the roll with ailerons and against the roll with rudder, but the encyclopedia tells you to leave the ailerons alone and solely use the rudder...
